Breakfast Cake

O.K., as a friend pointed out, “cake” is misleading.

But, I say, once you’ve tried it, you’ll know why I use the word cake. It’s the second best thing to having actual “cake” for breakfast. Really though, I feel like it’s the first best because it’s super nutritious.

What I use:

1 Tbsp ground flax + 1 Tbsp ground chia soaked ~20 min in ⅓ cup unsweetened almond milk

1 banana

½ cup fresh blueberries

Handful of roasted, unsalted, chopped pecans

2 Tbsp unsweetened coconut yogurt

Dash of vanilla powder

Dash of sea salt

Squeeze of fresh lemon
